Shallow Fried Redfish
Ingredients:
- 2 redfish fillets
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 cup all-purpose flour
- 2 tbsp olive oil
- 1/4 cup vegetable oil (for frying)
Instructions:
- Season the Fish:
In a small bowl, combine salt, pepper, garlic powder, and onion powder. Pat the redfish fillets dry with a paper towel and season both sides evenly with the seasoning mixture. - Prepare the Dredging:
Place the flour in a plastic bag or zip-top bag. Add the seasoned redfish fillets to the bag, seal it, and gently shake until the fillets are coated with flour. - Remove Excess Flour:
Open the bag and gently shake off any excess flour from the fillets. You want a light, even coating. - Heat the Oil:
In a large skillet, heat the vegetable oil and olive oil over medium-high heat. You want enough oil to cover the bottom of the pan, but not too much — this is a shallow fry. - Fry the Redfish:
Once the oil is hot, carefully place the redfish fillets into the pan. Fry for about 2 minutes on each side, or until the fillets are golden brown and crispy on the outside and cooked through. The fish should easily flake with a fork when done. - Serve:
Remove the redfish from the pan and let them rest on a paper towel to absorb any excess oil. Serve hot with your favorite sides or a squeeze of fresh lemon for an extra pop of flavor!
