This is one of those “I didn’t measure anything but it still came out amazing” meals. Juicy chicken, buttery mushrooms, fresh herbs, and a cozy bowl of rice to catch all that sauce. It’s quick, flexible, and forgiving.

🛒 Ingredients
(Approximate – measure with your heart)
- ½ lb chicken breast
- ½ cup jasmine rice (or any rice you like)
- 1 container sliced mushrooms
- 3 green onions (plus extra for garnish)
- ~3 tbsp chopped cilantro
- 3 garlic cloves
- 2 tbsp butter
- Splash of olive oil
- Salt & pepper, to taste
Optional (but highly recommended for sauce magic):
- 1 tbsp crème fraîche
or sour cream
or a splash of heavy cream
🍳 Instructions
1. Start the Rice
Rinse your rice and let it soak for about 10 minutes.
Then cook it in salted water:
- Either like pasta (drain when done), or
- Using the absorption method
👉 No pressure. Just get it fluffy and cooked.
2. Make the Herb Mix
While the rice is doing its thing:
- Chop green onions, garlic, and cilantro
- Mix together with a tiny splash of olive oil
Set this aside. This is your flavor bomb.
3. Cook the Chicken
- Heat a pan over medium-high with a little olive oil
- Season chicken with salt and pepper
- Cook on both sides until golden and fully cooked
Remove from the pan and set aside.
4. Build the Mushroom Sauce
Same pan. Don’t clean it. That’s where the flavor lives.
- Add ~½ cup water to deglaze
- Scrape up all those browned bits (this is important 👀)
Then:
- Add mushrooms → cook ~30 seconds
- Add herb mixture → stir everything together
- Season with salt & pepper
- Add butter
Let it cook until mushrooms are soft and saucy.
5. Make It Creamy (Optional but elite)
Stir in one of the following:
- Crème fraîche
- Sour cream
- Heavy cream
This turns it into a silky, rich situation.
6. Bring It Together
- Add chicken back into the pan
- Let it warm through and soak up the sauce
7. Serve
Spoon rice into a bowl.
Top with chicken + mushrooms + all that sauce.
Finish with extra green onions on top.
💡 Notes (a.k.a. keep it basic)
- Don’t overthink the measurements
- Any herbs you have will work
- This is a “use what’s in your fridge” type of meal
- The pan sauce is the star, so don’t skip deglazing
