Every once in a while, I come across a recipe that sounds just interesting enough that I have to try it.

This time, it was miso chicken.

I followed a recipe from New York Times Cooking, and since I hadn’t done a whole lot of cooking with miso before, I was curious about what kind of flavor it would bring to the chicken.

Spoiler: the finished chicken was delicious.

But before we got to the finished chicken, I made a questionable culinary decision. 😂

Apparently, You Shouldn’t Just Eat Miso Paste

While I was cooking, I decided I wanted to know what the miso tasted like on its own.

So I tasted it.

Straight.

From the container.

Friends.

It was horrendously salty. 😂

And the weird thing is, I could tell there was a really good flavor underneath all that salt. It was savory, rich, and tasty, but eating raw miso paste by itself was basically my taste buds getting hit over the head with a tiny sodium chair.

Lesson learned.

Once the miso was incorporated into the rest of the ingredients and cooked with the chicken, though? Completely different story.

So, How Did the Miso Chicken Turn Out?

I served the chicken with mashed potatoes, and it turned into one of those meals that looks a little fancy without requiring me to suddenly become a contestant on a competitive cooking show.

The miso gives the chicken this deep, savory flavor that made it much more interesting than my usual weeknight chicken situation.

And rather than recreate the New York Times Cooking recipe here, I want to give credit where it’s due. I followed their recipe, and if you’d like the exact ingredients and instructions, that’s where I’d recommend getting them.
