Keto! Low carb! There’s so much focus on eating keto-friendly and low-carb meals as a way to lose weight and improve overall health.
In full disclosure, I am not a nutritionist. I am a basic ass cook and baker. I have wanted to get into eating keto-friendly meals to lose weight. So, I am a keto-consumer, not a keto expert.
After some basic research, I decided to try to develop several keto-friendly MEALS (not just recipes) that I could share to help people try the diet in an easy way.
I want to create easy and fast Keto recipes for entire meals, not just recipes for side dishes or main dishes. I want a whole MEAL, done in 30 minutes or less.

One thing that I have encountered when searching for keto meal content is that lots of the existing content is just recipes that I then have to assemble into a meal. That’s annoying to me. I want an easy to follow Keto meal that will be done in 30 minutes or less. I don’t want to spend hours on on Pinterest trying to assemble a meal.
So, complaining aside, here’s the first recipe for a FULL MEAL that you can use to get something whipped up super fast, keto style.
Salmon with Brussel Sprouts and Sautéed Mushrooms
Ingredients (makes 2 servings)
- 3-5 ounces of uncooked salmon
- 2 cups (approximately) brussels sprouts
- 1 cup sliced mushrooms
- 1/2 small onion
- 3 cloves garlic
- 1/4 teaspoon Tony Chachere’s Creole Seasoning
- 1 teaspoon Herbs du Provence seasoning
- Salt and pepper to taste
- 2 tablespoons unsalted butter

Directions
BRUSSELS SPROUTS
Add a few cups of water to a pan that has a lid. Insert a steamer basket. Put brussels sprouts into steamer basket after water has started to boil. Sprinkle a bit of salt over the brussels sprouts and cover the pot with a lid. Steam at medium low until the brussels sprouts are tender. After brussel sprouts are tender, toss them with salt, pepper, and a pat of butter. Serve hot.
MUSHROOMS & SALMON
Meanwhile, chop onions into small pieces. Add to a pan and add a pinch of salt to help onions begin to soften. Add mushrooms and Herbs du Provence and sautée. Do not add more salt to the mushrooms after they’re in the pan. Sautée for about 2-3 minutes. While the mushrooms are sautéeing, season the fish with the creole seasoning. Add the seasoned fish to the pan with the mushrooms and add a pat of butter on top of the fish. Add a bit of water to the pan (about 3-4 tablespoons, just enough to make steam and sauce). Cover the pan and cook until the fish is cooked to desired doneness, approximately 7 minutes, until the fish is opaque. Stir the melted butter into the mushrooms and taste everything for seasoning.
You’re done! Serve everything together and enjoy!
