Happy Thanksgiving, or at least what’s left of it by the time this post is posted. How was your day? I hope you had a great day.
I spent Thanksgiving following the CDC guidelines to remain socially distanced from a large gathering. I do plan to see my family for Christmas, but we will practice safe social distancing procedures at that time as well.
This year, I did miss my mom’s food, but I am very thankful to have friends who traded edible things with me. One friend gave me some turkey meat and the other gave me some vegan stuffing (I would’ve never guessed that the stuffing was vegan!). I ate the gifted food with some steam in the bag corn (mixed with salt, pepper, onion powder, and garlic powder and tons of butter) and some canned cranberry sauce. I absolutely adore canned cranberry sauce, which to me, is the true reason for the season.
I made carrot cake cupcakes and recorded myself following the recipe for them. I consulted the Sally’s Baking Addiction blog (she is absolutely fabulous!) for this recipe and the cupcakes turned out great.
