Some days demand that you cook something fast and budget-friendly. I don’t know about you, but I’m about sick of everything and everybody, including these high-ass grocery prices. My nerves are bad. I just need to eat and get on with my life.
That’s why I bought some blue corn tortillas and some shrimp: both usually bougie ingredients that were ON SALE.
Let’s make something simple, low-effort, high-reward that feels just a little fancy without actually doing the most.
🛒 What You’re Working With
For the tacos:
- Blue corn tortillas
- Giant shrimp (peeled & deveined)
For the sauce:
- 2 tbsp Duke’s mayo
- 1 heaping tsp sour cream
- ½ avocado
- 2 tbsp lightly chopped cilantro
- Salt, pepper, onion powder, garlic powder (to taste)
- Splash of water (to thin it out)
For the shrimp seasoning:
- Salt
- Pepper
- Onion powder
- Garlic powder
- Smoked paprika
- Drizzle of olive oil
🌀 Make the Sauce (the real main character)
In a food processor, combine:
- mayo
- sour cream
- avocado
- cilantro
- seasonings
Blend it up until smooth, then add a little water until it gets that creamy, drizzle-able consistency.
Taste it. Adjust it. Fall in love with it.
🔥 Cook the Shrimp
- Toss your shrimp with all the seasonings + olive oil
- Spread them in a baking dish
- Bake at 350°F for 8–10 minutes, until pink and cooked through
No babysitting. No stress. Just vibes.
🌮 Warm & Assemble
- Pop your blue corn tortillas in the oven for 2–3 minutes
- Layer in your shrimp
- Spoon (or generously smother) with that sauce
